Easy Banana Walnut Loaf Cake


This recipe is from my mum's cookbook, which she has had since I was born. This is a fool-proof banana bread, which always comes out scrumptious. I hope you enjoy this recipe!


Ingredients:


225g self-raising flour
100g room temperature butter
175g caster sugar
2 large eggs
1 tsp vanilla extract
2 tbsp milk
1 tsp baking powder
2 ripe bananas
50g walnuts

1 tsp cinnamon

Instructions:

1. Preheat the oven to 160°C fan (180°C)
2. Grease and line a loaf tin with parchment.
3. Chop the walnuts, put them in a baking tray and toss them into the oven for 10-15
minutes. Leave it out to cool.
4. In a bowl, cream the butter and sugar together with an electric whisk until light
and fluffy.
5. Add the eggs one at a time, mixing in between each one. Then add the vanilla extract and milk and mix it together one last time.

6. With a whisk, mix together the dry ingredients.
7. Add the dry ingredients to the wet ingredients in thirds whilst mixing in between.
8. Fold in the walnuts into the mixture and spoon the batter into the loaf tin.
9. Bake for approximately 1 hour until well risen and golden brown.
